The highlight this weekend is clearly The Royal Wedding and many of us will be celebrating with the happy couple as they exchange vows in Windsor. Bunting and Union Jacks, sunshine and champagne.  If you haven’t got an invitation there are various options – and throwing a party is always one of ours!  Cucumber sandwiches and some spicy coronation chicken, and of course a Victoria sponge. Definitely still time to make all these, easy peasy for a right Royal knees up.

 

Coronation Chicken

Greek yogurt, mango chutney, fresh mango cut in to cubes, lemon juice, black pepper and salt and a flurry of curry powder. Mix and taste and then fold in lightly poached chicken which has been cut into bite size pieces.  Couldn’t be easier. Fresh and delicious!

Victoria Sponge

Heat the oven to 170c, butter two 20cm sandwich tins and line, in the blender mix 200 grams of softened butter and 200 grams of caster sugar until smooth and then add the 4 eggs, beat well, then 200g of self-raising flour and a 1 tsp of baking powder, maybe a drop of milk. Pop in the tins, bake for 20 minutes and the cake will spring when you press it gently. Hey presto, just cool on a wire rack, then fill with fresh cream and strawberry jam.
