What will you be up to? I’m sharing the latest in our baking exploits. This week I held a “master class” at home to show how simple it really is and of course totally on trend, to create vegan versions of your firm favourites.

Today I share my vegan friendly bread recipe, which is as good as the original!

• 500 grams of stone ground spelt flour
• 1 packet of Allison’s yeast (green packet)
• 1 teaspoon of baking powder
• 500 Millilitres of warm water
• 1 heaped tea spoon of salt
• 2 table spoons of honey

Step 1 combine the flour, yeast and baking powder
Step 2 dissolve the honey and salt in warm water
Step 3 combine the dry ingredients with the warm water, stir and leave in a bowl covered with clingfilm in a warmish place for 1 hour
Step 4 when the dough has proved and risen (doubling in size) add nuts and or fruit (I used pecan, walnut, pumpkin seeds, apricots) put in a baking tin
Step 5 bake at 250 degrees for 40 minutes

You can tell it is ready because when you tip it out and tap the base it sounds hollow. I have experimented with lots of timings and temperatures because that’s what I do but this really works!
